Chocolate Peanut Butter Balls are the perfect after-school-snack or grab-and-go breakfast for busy mornings. Quick and easy to make and keep for weeks in the freezer.
We have old fashioned rolled oats packed full of fibre. Almond meal and peanut butter for power protein. Hemp seeds because there is no better super food to stock up your iron stores. Cocoa powder, maple syrup and chocolate to make it all into the most delicious energy bites you will have tried in your life.
Energy bites are always a hit as snack but these Chocolate Peanut Butter Balls have won the contest at my home so far. It almost feels like eating dessert when all you do is having a healthy snack. If your kids’ schools allow bringing nuts and peanuts this would make a great school snack. If not, it will be an excellent after school snack everybody will love.
If you choose not to dunk them in chocolate you can prepare them in 10 minutes flat. The freezing makes them hold their shape and the chocolate hardens faster to it. You can easily eat them right away though. No freezing needed.
Now let’s get right down to the recipe so you can try for yourself:
Makes: approx. 25 balls
Prep Time: 10 minutes
Cook Time: 5 minutes
Ingredients:
1.5 cups (150g) old fashioned rolled oats
1 cup (115g) almond meal
1/2 cup (150g) peanut butter
1/4 cup (25g) unsweetened dutch-processed cocoa powder
1/4 cup (40g) hemp seeds
2 Tbsp liquid coconut oil
1/3 cup (70ml) maple syrup
50g 70% dark chocolate (optional)
50g white chocolate (optional)Instructions
1. Add all ingredients to a food processor and process until a thick dough forms and everything is well combined.
2. Form little balls by squeezing some of the dough between your fingers and then rolling it in between your two palms until you form a ball. If you want to be precise and have them all the same size, use a measuring tablespoon to measure out the amount of dough.
3. Place the balls on a baking paper lined baking sheet and put in the freezer for 15-20 minutes.
4. You can now either eat them just like that or you can dunk them in melted chocolate to make them look more fun. For this, melt dark chocolate and/or white chocolate in a double boiler and dunk the freezing cold balls into the chocolate and place back on the lined baking sheet. Once all are finished, place back in the freezer for a couple minutes for the chocolate to harden.
5. They keep well in an airtight container in the fridge for up to a week or in the freezer for much much longer.
