One of my kids adores peanut butter and jelly sandwiches. The other abhors them. I don’t have time to make two different lunches for school every day, but they each need a nutritious lunch. This summer, we discovered a lunch box meal we all agree on – wraps. They’re delicious, easy to make and fun to eat. From our family to yours, here are a few of our favorite wrap recipes.
Pizza Wraps
I usually start with a whole wheat, herb, spinach, tomato or pesto wrap and layer it with sauce, mozzarella cheese and leftover hamburger, sausage or steak. I bake it in the toaster oven until the cheese bubbles and wrap it securely in aluminum foil. It won’t be piping hot by lunch time, but my kids don’t mind.
We’ve also altered this recipe with alternative pizza toppings, such as:
- White sauce
- Broccoli
- Spinach
- Pepperoni
- Mushrooms
- Onions
Mediterranean Chicken Wrap
Combining last night’s chicken with flavorful Mediterranean ingredients creates a tasty and exotic wrap. We like topping a spinach or tomato tortilla with feta cheese, hummus and cucumber tzatziki. Tomatoes and mozzarella taste good too, especially with a side of olive oil or vinaigrette for flavorful dipping.
Salad Wraps
Fresh or canned tuna combines with a chopped hard-boiled egg, a handful of chopped celery, a sprinkling of chopped onion and a touch of mayo or Ranch dressing to create a tasty tuna salad wrap. I usually pack the tuna salad in a small, sealed container and add tomatoes and lettuce on the side.
Use other ingredients if your kids aren’t into tuna. Shredded chicken, beef, ham or eggs mixed with mayo also makes delicious salad ingredients. I sometimes add a side of tomato, lettuce and cheese to create filling lunch box wraps.
PB&J
To please my peanut butter and jelly lover, I turn his favorite sandwich into a wrap. I layer peanut butter and jelly on a crepe or whole wheat tortilla, and then wrap it up for my little one’s delight. My non-PB&J lover appreciates plain peanut butter, honey and banana on crepes. Yummy!
Lettuce Wraps
I don’t serve these often because they’re not as popular as traditional whole wheat or corn tortillas. My daughter likes lettuce wraps occasionally, however. She especially likes butterhead lettuce because its leaves are large and flexible enough to hold all the ingredients she wants to stuff inside.
Eggs and Bacon Wraps
Breakfast for lunch sounds good to me! Scrambled eggs and bacon or sausage combine with cheese and salsa to create a mouth watering wrap. I sometimes use Indian Naan or pita bread as the wrap for this lunchtime meal.
Sesame Lime Steak Wrap
A combination of flavors and texture create a unique wrap from dinner leftovers. It uses steak marinated in lime juice, honey, soy sauce, ginger and sesame seeds. I layer the steak on a wrap and add lettuce and tomato, and my kids go wild.
Speedy Quick Wrap
All these recipes taste delicious, but I don’t always have tons of time to assemble wraps. Those are the days when I rely on speedy quick wrap ingredients like lunch meat and deli cheese. I toss in a bag of carrots, grapes or sliced apple, and my kids are good to go.
Assembling lunches takes just a few minutes every day since I found wraps. My kids love them, and they’re filling and nutritious. What are your family’s go-to wrap ingredients?
